1/4 cup margarine, butter or shortening
3/4 cup cooked or canned pumpkin
3/4 cup cooked or canned pumpkin
2 eggs
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1/2 tsp cinnamon
1/4 tsp ground ginger
1/8 tsp nutmeg
1 cup sugar
1 tsp vanilla
3/4 cup flour
Optional – ½ cup raisins or chopped dates, 1/4 cup chopped nuts
Grease 8-inch square pan or 9-inch pie pan. In medium saucepan, melt margarine. Stir in remaining ingredients. Pour into prepared pan. Bake at 375° for 30 to 35 minutes until top springs back when touched lightly in the center. Serve warm or cool topped with whipped cream or ice cream.
High Altitude Adjustment: Bake at 375 degrees for 30 to 35 minutes.
